Action Line: Unsanitary cooking at the Bowling Alley Published Feb. 27, 2015 By Col. Robert G. Novotny 48th Fighter Wing commander ROYAL AIR FORCE LAKENHEATH, England -- COMPLAINT: On two occasions, I witnessed two separate diner workers at the bowling alley cook my food without gloves. On one day I ordered funnel fries and the employee reached into the bag without gloves and placed the fries in the deep fryer. A few days later, a different employee cooked my food without gloves and between cooking I saw him wipe his nose with the back of his hand. Is this proper sanitary practices on base? RESPONSE: No, this is not appropriate sanitary practice, and thank you for telling us. We appreciate your concern regarding the safety and sanitation of the Bowling Center. Safe food handling is incredibly important, and I know the 48th Force Support squadron takes immense pride in offering a quality product to you and fellow customers. In accordance with the Public Health Food Code, employees are required to use gloves when coming into contact with Ready-to-Eat (RTE) items - that is, any item that does not require cooking prior to serving - for example, prepared bread, vegetables, baked goods, etc. Although gloves were not required in the scenario you provided, if at any time an employee touches another body part and/or contaminated work surface, it is necessary for them to wash their hands again prior to handling food products. We have reiterated these guidelines to our personnel. If you have any further concerns, please don't hesitate to share them.
